Kosher Neutrition

Kosher foods pic

There are three types of kosher nutrition - meat, dairy and neutral. Neutral products are: fruits, vegetables, grains and fish that have fins and scales (sea bass, salmon, cod, herring, carp, halibut, mackerel, trout and tuna). Fruit is allowed to be eaten only if it is picked from the tree that is older than four years. Dairy nutrition includes all dairy products. Meat nutrition includes meat of certain animals (cattle, sheep, goats), and birds killed and cleaned in a specific way. It’s allowed intervening neutral foods, meat can also be combined, milk too, but the combination of meat and dairy products is strictly prohibited – as a symbol of life and death. Meals of these foods, must be prepared in a different cooking pots, and it is necessary to have two sets of pots, plates and cutlery - one for meat, another for a dairy meals.

It is important to mention that after the consumption of meat it’s required to pass six hours in order to be able to drink milk or eat dairy products. Mollusks, clams, lobsters and crabs are prohibited due to the fact that in the past typhoid has been spread through these products and that they are the source of skin diseases. Besides them, the birds of prey are also prohibited because they are seen as possible carriers of infections, pork as possible cause of trichinosis is prohibited too. It sounds unbelievable, but as desirable nutrients are considered the grasshoppers (four specific types of them). Other insects are not used in this diet.

There are certain regulations that must be considered in the process of slaughtering of the animal that is allowed to be eaten, in order to be kosher. Each animal slaughtered in ritual on the ground and in the presence of a rabbi. The peel of the skin is also is done by hand on the ground. Medically speaking, one of the most important factors to preparing healthy and tasty meat is the so-called humane slaughter of an animal, when the animal is not aware that is slaughtered. Specially trained kosher slaughterer called sohet, cuts the animal’s throttle and esophagus with special razor - sharp knife. In this way the animal dies instantly and painlessly. The flesh prepared in this way is considered to be relieved of toxic substances that are secreted if the animal is aware of his slaughtering. After that, it’s examined whether there are inflammatory processes in the internal organs, especially in the lungs. Blood that is ideal for the development of all kinds of bacteria is dried. In order to extract the maximum amount, the meat is covered with coarse salt and is left over an hour on an inclined surface. When the blood is fully drained and thoroughly washed the salt is removed. The rules, also, require that the slaughter should not be cruel to animals - it is forbidden to slaughter a mother and her cub in the same day.

About 10 percent of the Jewish population in Israel adheres to the aforementioned principles, but also the millions of Jews around the world. The rest living in Israel were divided, roughly, half and half, to those who do not give any importance to kosher rules, and those who adhere to only some of the rules (for example, they do not eat pork, but after a meat meal they pour milk in the coffee).More than 90 percent of all food products sold in Israel are subject to kosher rules. What’s more interesting, this diet is not only practiced by religious Jews. According to the research of "Kosher Today" only one million of eleven million Americans who are choosing products produced according to the principle of kosher are from Jewish origin. Others are Adventists, Muslims, vegetarians, those who are lactose or gluten intolerant, people who are convinced that kosher label guarantees quality and accuracy. The process of preparing kosher food, so-called Kashrut, has lately become a brand. Foods that carry this label must have been certified and prepared under the constant supervision of a rabbi. What is insisted all the time is their purity and the natural way of production. For example only sugar obtained from sugar cane can be used, which was previously filtered.

In order to receive a perfectly white sugar, the color is removed trough certain process. Considering that bread is eaten at every opportunity, several times a day, bread is never prepared with any of the milk products. The only exception is if the bread is prepared for special occasions.
